The Seasoned Spoon Café is a not-for-profit cooperative that serves locally grown, organic food at Trent University.
Head Cook
The Seasoned Spoon Café is offering a part-time, 8 month contract position (30 hours/week, August 30, 2010 until late April 2011) at Trent University. We are seeking self-directed individual with café management experience and strong cooking skills. The café is closed during exam periods and school holiday's including reading week's and winter break--there may or may not be work during these times.
Compensation: $14.00/hour
Job Description
The Head Cook will spend approximately 20 hours per week preparing foods and overseeing staff in the café. Additional hours will be spent purchasing food and conducting other managerial duties as described below.
The Head Cook will be responsible for:
* Overseeing day-to-day operations & maintenance of the café
* Supervising, training, and directing staff and volunteers
* Providing mentorship and leadership to student employees
* Setting schedules and regular staff meetings in conjunction with coordinator
* Provide prompt staff feedback and evaluation
* Coordinating catering events (menu planning & food production/presentation)
* Food inventory
* Regular updates and communication with the coordinator
* Menu planning and food costing
* Ordering and sourcing of food in conjunction with coordinator
* Ensuring consistent food quality and setting appropriate portion sizes
* Creating and implementing systems of organization and cleanliness in the kitchen and cafe
* Adhering to regulations pertaining to Food Handling & Safety as outlined by the Peterborough City/County Health Unit
* Bi-weekly farmers market pick-ups and other shopping in conjunction with the coordinator
Required Skills and Qualifications:
* Knowledge and interest in the politics of food and agriculture
* Strong food preparation and cooking skills within a busy environment
* Knowledge of cooking seasonal vegetarian food
* Experience and knowledge of café/restaurant operations and maintenance
* Experience with staff training and supervision
* Strong communication and interpersonal skills
* Good organizational skills, punctuality, and attention to detail
* Access to a vehicle* Food Handlers Certificate
Assets:
* Knowledge of cooperative structures
* Experience preparing gluten-free and vegan foods
* Experience in Excel (for food ordering and scheduling purposes)
An awareness of the challenges and opportunities that are inherent within local food sourcing and food sourcing outside mainstream channels of commercial food production will be important within this position. Understanding the Spoon's role as an experimental model of an institutionally based alternative (which means we are looking at innovation and best practices informed by a bottom line but not driven by a bottom line) and keeping a commitment to the Spoon's mandate and cooperative structure is necessary.
The position welcomes creativity and requires an individual willing to work during café operating hours as well as Saturday mornings bi-weekly.
